MUTTON SOUP





Mutton soup is a delicious and healthy soup which gets done in a jiffy. It is cooked without oil and is mildly seasoned with pepper. This soup can also be prepared with mutton bones. We usually serve Mutton soup as a clear soup after passing it through a strainer, but you can also have it as it is. If you are serving as a clear soup, then use large chunks of mutton as it will be easy to separate the mutton which can be used to make other mutton based gravies. To serve as it is, use very small pieces of mutton and cook for 2 more whistles.

Shorba and Mutton paaya are other mutton based soup like curries which are usually had with rice and cooked with the addition of coconut, and other masalas. The recipe of shorba will follow soon.


Serves: 4
Ingredients

200 gms Mutton
¾ tbsp Garlic paste
¾ tsp salt
¼ tsp pepper powder
Pinch of turmeric powder
1 onion chopped
¼ cup coriander leaves chopped
4 ½ cups Water

Method

Wash and clean the mutton pieces and keep ready.
Heat a pressure cooker and add all the above given ingredients. Stir well, close the lid and cook for 4 whistles. Strain the soup in a strainer and serve hot as it is or with bread.

The mutton chunks can be used to prepare any mutton gravy. Reduce the cooking time of mutton as it is already cooked.
