STIR FRIED VEGETABLES WITH NOODLES





This is a very simple and easy to cook noodle recipe that can be served either for breakfast or dinner. It gets done in less than 20 minutes and tastes delicious. I have used carrots, beans and capsicums but you can use any vegetable of your choice.

Ingredients

1 packet Hakka noodles (200 gm)
3 to 4 tbsp of oil
1 onion sliced
1 capsicum chopped
1 carrot cut into thin strips
¼ cup chopped beans
1/2 tbsp ginger paste
1/2 tbsp garlic paste
2 tbsp tomato sauce
1 tsp chilli sauce
1 tsp soya sauce
1/2 tsp red chilli powder
1/2 tsp pepper powder
Salt to taste

Method

Boil water in a pan with 1/2 tsp salt. Add the noodles and cook for 5 minutes. Then close the lid and switch off the gas. Let it sit in hot water for about 5 minutes. Drain the excess water and run it through cold water. To prevent the noodles from sticking, add ½ tsp oil and mix well.


Heat oil in a pan and saute the carrots, beans and capsicums till cooked. Transfer to a plate and set aside. Heat oil in the same pan, add onions and saute till they turn golden. Next add ginger garlic paste and saute till the raw smell goes. Now add all the sauces, red chilli powder, pepper powder, and salt. Mix well and add the vegetables. Finally add the cooked noodles and combine everything well. Stir fried vegetables with noodles is ready to be served.
