CHILLI BUNS




Chilli bun is yet another innovation from my kitchen. It is a savoury snack that you can try when you wish to make something unique and different. For making Chilli buns, we make mini buns first and then temper it with spices of our choice. Here I have kept the buns plain, but you can also add onions, green peas and capsicums for added taste. Do try it out and I am sure you will like it.

Ingredients

1 cup all purpose flour (maida)
2/3 tsp active dry yeast
1/2 tsp sugar
1/4 tsp salt
2 tbsp warm milk
1/8  cup warm water (or as needed)
2 tbsp oil or butter

For tempering

2 tbsp oil
pinch of red chilli powder
pinch of garam masala powder (optional)
pinch of salt
chopped coriander leaves

Method

  • Take warm water in a bowl, add sugar and yeast and mix well. The sugar and yeast should dissolve.
  • Set aside for 5 to 10 minutes till it turns frothy and creamy.
  • Now take a bowl, add all purpose flour and salt and mix well.
  • Next add the yeast mix, warm milk and mix well.
  • If necessary, add some more warm water and knead for 5 to 10 minutes till you get a smooth dough.
  • Add 1 tsp oil or butter and knead for a couple of minutes.
  • Place the dough inside a bowl and close with a lid.
  • Allow the dough to rest for about an hour for the dough to double in size.


  • When the dough has doubled, punch it down, dust some flour and knead again for about 5 minutes.
  • Divide this into tiny balls and place them inside a greased aluminium baking pan leaving some space between the dough balls.
  • Cover and set aside for another proofing of about an hour.
  • The dough balls would again double in size.
  • Preheat the oven at 160 degree Celsius for 10 minutes and grease the top of the dough buns with milk.
  • Now place the pan in the central rack of the oven and bake for 10 to 15 minutes till the mini buns turn golden in colour.
  • Take out the pan and immediately apply some butter on top of the buns.
  • Allow them to cool down completely.
  • Then heat oil in a non stick pan, add red chilli powder, garam masala powder and salt and switch off the gas.
  • Mix everything well and add the mini buns and coriander leaves.
  • Gently toss them so that they are nicely coated with the spice powder.
  • Transfer to a bowl, garnish with coriander leaves and serve.
