KOVAKKAI PORIYAL/ TINDORA FRY/ IVY GOURD FRY




Kovakkai or Ivy gourd/ Tindora is a healthy and delicious green vegetable. It can be used to prepare poriyals/ stir fries or gravies. Today I am sharing a very simple, quick and easy recipe of Kovakkai poriyal that can be cooked in just about 20 minutes. Kovakkai poriyal tastes great with plain rice and sambar.



Ingredients

250 gms fresh kovakkai (Tindora) thinly sliced
3 tbsp oil
1 onion finely chopped
2 tsp ginger garlic paste
½ tsp red chilli powder (or to taste)
¼ tsp turmeric powder
½ salt
2 tomatoes deseeded and pureed
½ Lemon (optional)
Chopped coriander leaves for garnish

Method

  • Heat oil in a pressure cooker, add onions and saute till they turn golden.
  • Add ginger garlic paste and saute till the raw smell goes.
  • Next add salt, red chilli powder and turmeric powder and mix well.
  • Add tomato puree and cook for a couple of minutes till oil starts separating.
  • Now add the sliced kovakkai/ Tindora and mix well.
  • Add 1 or 1 and ½ cup water and close the lid of the cooker.
  • Pressure cook for 3 whistles.
  • Open the lid and once again switch on the gas.
  • Check for taste, add salt or lime juice if necessary.
  • Cook for a few minutes till most of the water has evaporated and the poriyal is dry.
  • Transfer to a serving bowl and garnish with chopped coriander leaves.
  • Serve hot.
