Serves: 2

4 tbsp oil
2 onions finely chopped
2 tsp ginger garlic paste
½ tsp salt (or to taste)
½ tsp red chilli powder (or to taste)
2 tomatoes deseeded and chopped
1 potato skin peeled and chopped into very small cubes
Chopped coriander leaves
2 cups cooked rice
lemon juice (optional)


Heat oil in a pan, add onions and saute for a few minutes till they turn golden.
Next add potatoes and cook for a couple of minutes till they turn soft.
Next add ginger garlic paste and saute till the raw smell goes.
Add salt, red chilli powder and tomatoes and cook for a few minutes while stirring till the tomatoes turn mushy and soft and oil starts separating.
Add the cooked rice and mix well.
Check for taste, add salt or lemon juice if required.
Garnish with coriander leaves and serve.
