POTATO STIR FRY





This is yet another potato recipe from my kitchen. I make this often at home when I am in a hurry and wish to make something fast, without spending much time in the kitchen. This potato stir fry can be served with sambar, dal or rasam along with rice. Ingredients

3 tbsp oil
½ tsp mustard seeds
½ tsp cumin seeds
½ tsp red chilli powder
¼ tsp turmeric powder
½ tsp salt (or to taste)
3 potatoes skin peeled and cut into medium size pieces
¼ tsp garam masala powder
Coriander leaves







Method

  • Heat oil in a non stick pan and add mustard seeds and cumin seeds.
  • When they start sputtering, add red chili powder, turmeric powder and salt and mix well
  • Add the potatoes and combine everything together.
  • Keep cooking in high flame for a couple of minutes.
  • Then reduce heat, close a lid and cook for 10 to 15 minutes till the potatoes are soft and cooked.
  • Now add garam masala powder and coriander leaves and mix well.
  • Serve hot with rice and toor dal curry or sambar.
