DOUBLE BEANS CURRY




Double beans curry is a delicious and quick recipe from my mother. This curry can be made with both fresh or dry double beans. I make this curry when I don't have time to chop veggies. This is a versatile curry and hence can be served with idlis, vegetable dosa, maida dosa, rice or chapathi. For more curry recipes, you can check out this link.


Ingredients

1 cup dry double beans soaked in water overnight
3 tbsp oil
1 onion chopped
1 ½ tsp ginger garlic paste
2 tomatoes deseeded and pureed
4 tbsp coconut paste
3 tsp coriander powder
1 tsp chilli powder
¼ tsp turmeric powder
2 tbsp mehti (fenugreek) leaves or kasuri methi
1 tbsp soya sauce
½ tsp salt (or to taste)

Method

  • Heat oil in a pressure cooker and add onions.
  • Saute till the onions turn golden and then add ginger garlic paste. Saute for few minutes. 
  • Then add red chilli powder, turmeric powder, coriander powder and salt. 
  • Mix well and add tomato paste and cook till oil starts separating. 
  • Now add double beans, fenugreek leaves and mix well. 
  • Dissolve coconut paste in 2 cups of water and add to the cooker. 
  • Mix well and add coriander leaves. 
  • Now close the lid, and cook for 4 whistles. 
  • Once the pressure subsides, open the lid and check if the double beans are cooked. If not cook for a few more whistles.
  • Once done, add soya sauce and bring it to a boil. 
  • Close a lid and cook in moderate flame for about 5 minutes. 
  • Serve hot.
