BASIC SPONGE CAKE RECIPE WITH VIDEO




Plain sponge cakes are my favourites. They are versatile and can be used to make layer cakes with frosting, or served as it is with tea and also can be used to make custards, trifle, puddings, etc. I have shared several different cake recipes in my blog which can be found in this page and today, I am going to share a simple cake recipe that uses very little butter but tastes delicious. I have kept it plain as we prefer eating plain cakes at home,but you can add butter cream or chocolate or any other frosting of your choice.

Ingredients

30 gms unsalted butter
2 cups powdered sugar
2 eggs
1½ cups milk
1 tsp vanilla essence
2 cups all purpose flour (maida)
1 ½ tsp baking soda
1/4 tsp salt
1 tsp corn flour






Method

  • Soften butter in a bowl. Add powdered sugar and mix well.
  • Next add eggs one at a time and beat well with a whisk, egg beater or electric beater.
  • Then add vanilla essence, milk and beat well.
  • Now take a sieve, add maida, baking soda, corn flour and salt and sieve it directly on the batter.
  • Mix the dry and wet ingredients gently till you get a nice smooth and lump free batter. 
  • Now preheat the oven at 170 degree Celsius with both rods on for 10 minutes. 
  • Meanwhile, grease one large aluminium pan (or 2 small pans ) with butter and then flour with maida. Dust away any excess flour and keep the pan ready. 
  • Then add the batter on to the pan till it is half full and place them in the central rack of the oven. 
  • Bake at the same temperature with upper and lower rods on for 30 to 35 minutes or till a toothpick inserted comes out clean.

This recipe makes two cakes of 5 ½” diameter and 1 ½” height or one cake of 7" diameter and 2" height. You can also cut each cake into 2 layers and add any frosting of your choice.




Note:
  • Always wait for a few minutes before taking out the cake.
  • Allow it to cool down completely before cutting.
  • Keep it in an air tight container and/or refrigerate for later use.
