With Christmas and New year celebrations round the corner, Cakes and cookies are very much common in most houses. I am giving below a very simple and easy to cook sponge cake recipe using oil. It is so soft and delicious that you would wish to make it again and again.
Ingredients
2 cups all purpose flour (Maida)
1 ½ tsp baking powder
2/3 tsp baking soda
1 cup thick curd
2 cups powdered sugar
1 egg
½ cup oil
1 ½ tsp vanilla essence
2 circular cake pans, butter for greasing, maida for dusting the pans.
Method
Take maida, baking powder and baking soda in a bowl. Sieve twice and set aside.
Grease and flour two aluminium cake pans and set aside. Preheat the oven at 160 degrees Celsius with upper and lower rods on for 10 minutes. Then beat curd in a bowl. Add sugar and beat well. Next add egg and beat till soft peaks form. Now add essence, and oil and beat till all the ingredients are mixed well. Finally add the maida mix and fold well such that no lumps are formed. Pour this into cake pans such that it is half full, and place in the central rack of the oven with both upper and lower rods on. Cook at 150 degree Celsius for 25 to 30 minutes or till a toothpick inserted comes out clean.( Usually baking is done only with lower rods but sometimes in an otg the bottom part of the cake gets burnt hence you can follow this method if you have the same problem. ) You can frost the cake according to your choice or serve it as it is with tea.
