Cutlets are perfect snack on any day. They are usually prepared using potato as a base and other vegetables are added to enhance its taste and flavour. Here we have made cutlets using potatoes and peas and egg has been used for the outer coating. The egg binds the cutlet well and prevents the potato peas mixture from coming out while deep frying. Even though we have deep fried the cutlets, you can also shallow fry or stir fry to reduce the oil content.
This recipe makes approximately 18 to 20 cutlets.
Ingredients
3 big potatoes
½ cup peas
1 onion chopped
¼ tsp salt
1 tsp chaat masala
1 tsp red chilli powder
1 tsp cumin powder
1 egg
¾ cup all purpose flour (maida)
¾ cup Bread crumbs
Oil for frying
Method
Steam the potatoes and peas for 15 minutes or until cooked. Meanwhile fry the onions in a pan without oil till they are golden in colour. Transfer to a plate and allow it to cool. Once the potatoes are cooked, remove the skin and mash or grate them. Transfer the mashed potatoes and peas to a bowl, add chaat masala, salt, red chilli powder, cumin powder, onions and mix well. You will get a dough like consistency. Check for taste and add salt or masala if necessary. Once all the ingredients are mixed well, make finger sized rolls and set aside. Now take maida, egg and bread crumbs in separate bowls. Beat the egg well and keep ready. Roll the cutlets first in maida, then dip in egg and finally roll in breadcrumbs and set aside on a plate. Once all the cutlets are ready, heat oil in a pan and deep fry the cutlets till they are golden brown in colour. Fry 3 to 4 cutlets at a time. Transfer to a tissue paper to remove excess oil. Serve hot with tomato sauce.
