Rice and cheese cutlet is a very simple and easy to cook cutlet made using cooked rice and oats with cheese filling. The cutlet is crispy outside and soft inside. This tastes great with tomato sauce and is best served with tea as an evening snack.

This recipe makes approximately 8 cutlets.

1 ½ cups of cooked rice
1 cup oats
1 cheese cube (10 gms)
¼ tsp cardamom powder
1 tbsp ginger paste
2 green chilli deseeded and chopped
1 tsp white pepper
Salt to taste
1 tsp garam masala powder
½ tsp dry mango powder
3 tbsp chopped coriander leaves
Oil for frying

Grind the rice to a fine paste. Next dry roast the oats till fragrant and grind to a fine powder. Cut the cheese cubes into 8 equal pieces and keep ready. Take the rice paste, oats powder, and all the other ingredients except cheese and oil in a bowl and mix well. Check for taste and add salt, dry mango powder or pepper powder if necessary. Divide the mixture into 8 equal balls, take 1 ball and flatten. Place one cheese piece at the centre and carefully seal it with the mixture. Shape to form cutlets. In the same way prepare all the cutlets. Heat oil in a pan, and when oil is hot, deep fry the cutlets till golden brown in colour. Serve hot with tomato ketchup.
