ZARDA/ MEETHE CHAWAL/ SWEET RICE RECIPE WITH VIDEO




Zarda is a very delicious and easy to make sweet, made using basmati rice. It is a must have during family gatherings as kids and elders alike love it. I have already shared my mother's Zarda recipe in one of my earlier posts and you can check that here. Today I am sharing my way of making zarda with a video. Ingredients

For cooking rice
2 cups Basmati rice
4 cups water

For sugar syrup/ sheera
2 tbsp ghee
3 tbsp chopped almonds and cashew nuts
handful of raisins
yellow food colour
2 cups water
2 and 1/2 cups sugar

Method


  • Wash and soak Basmati rice in water for 1 hour.
  • Then take a pressure cooker, add water and rice and pressure cook for 2 whistles. Once the pressure subsides, open the lid and allow the rice to cool down completely.
  • Then heat ghee in a vessel, add chopped cashew nuts, almonds and raisins and saute for sometime. Then add 2 cups of water and 2 and 1/2 cups sugar and orange food colour and bring to a boil.
  • Boil and keep checking the syrup till it reaches a single thread consistency. (For this you can take a drop of sheera and place between your thumb and index finger and pull the index finger apart, if it looks like a thin thread then the sheera is ready. Another method is to take the sheera and drop it in a cup of water. It should not dissolve or break. It should remain intact).
  • Now add the cooked rice and mix well.
  • Switch off the gas, close a lid and allow it to cool. Set aside for about half an hour for the rice to completely soak the sheera. Zarda tastes great when served chilled.
