Flattened rice or poha or aval is rice flattened into thin dry flakes. It is easily digestible and is often had as a breakfast or with tea as a snack. Since flattened rice gets cooked really fast, this recipe takes just about 10 minutes to prepare.
Ingredients
3 cups flattened rice/ poha/ Aval
3 tbsp oil
½ tsp mustard seeds
8 to 10 curry leaves
1 big onion chopped
2 big tomatoes chopped
1 tsp red chilli powder
¼ tsp turmeric powder
½ tsp salt
¼ tsp garam masala powder (optional)
Method
Wash flattened rice with water, drain and set aside. (Flattened rice should not be soaked in water as it absorbs water and does not retain its shape.) Then heat oil in a pan, add mustard seeds. When they start sputtering, add curry leaves and onions. Saute till onions turn golden. Then add tomatoes and cook till they turn soft. Now add red chilli powder, turmeric powder and salt. Finally add flattened rice and mix well. Serve hot.
