KHEEMA OMELETTE/ IFTAR SPECIAL




Kheema omelette is a delicious and flavourful dish that is perfect for iftar.  I prepare a spicy kheema filling (recipe given here) and use it to make kheema samosa and kheema omelette for iftar. You can also prepare the kheema filling in advance and use it later to make the kheema omelette. Kheema omelette can also be served for breakfast or dinner.

Ingredients

4 eggs
1 large onion finely chopped
6 heaped tbsp kheema filling
4 tbsp chopped coriander leaves
1 tsp red chilli powder
1 tsp salt (or to taste)
2 to 3 tbsp oil







Method

Crack open the eggs in a bowl and beat well till the whites and yolks are well mixed.
Add red chilli powder and salt and mix well.
Add chopped onions and coriander leaves and mix well.
Now add the cooked kheema mix and mix well.
Heat a non stick pan and add oil. 
Spread the oil evenly and pour the egg- kheema mix on it.
Reduce flame, close a lid and cook for 2 to 3 minutes.
Open the lid and check if the omelette is cooked on the lower side.
When cooked, flip over and cook on the other side.
Cut it into pieces, transfer to a plate and serve.

For the kheema stuffing


For the stuffing

200 gms boneless chicken
2 large onions finely chopped
¾ tbsp garlic paste
¾ tbsp ginger paste
1 cardamom
1 cinnamon
1 tsp lemon juice
1 large tomato pureed
3 tbsp oil
1 tsp chilli powder
¾ tsp Salt (or to taste)
Coriander and mint leaves
½ cup water

Method

Wash and clean the chicken pieces and keep ready. Use a food processor to coarsely mince the chicken. Then heat oil in a pan, add cardamom, cinnamon and chopped onions, sauté till onions turn golden in colour. Then add garlic paste, ginger paste and cook till the raw smell goes. Then add red chilli powder, salt and minced chicken. Mix well and cook for a minute. Now add tomato puree and cook for a few minutes till oil starts separating. Finally add water, coriander and mint leaves. Mix well and close the lid. Cook for about 5 minutes till the chicken is cooked. Then add lemon juice and continue cooking in a low flame for 5 minutes. When most of the water has evaporated and the stuffing is dry, switch off the gas and allow it to cool. The stuffing is now ready. You can now use this chicken filling to make kheema omelette or kheema samosa.
