HOW TO MAKE SEV




Sev is a thin and crispy snack that is made by making a dough with Bengal gram flour and then deep frying it in oil using a sev press. This is a quick and easy to make snack which can served as an evening snack or can be made ahead and stored in air tight containers. It is especially favourite among kids and can also be used for garnishing chaats like Raj Kachori, Chana poori chaat, etc. For more snack recipes, you can also check out this page.


Ingredients

1 cup Bengal gram flour/ Besan
¼ tsp red chilli powder
½ tsp salt (or to taste)
¼ tsp asafetida powder (hing)
Pinch of turmeric powder
2 tsp hot oil
Water as required
Oil for frying

Method





  • Grease the insides of a sev press with oil and keep ready.
  • Take Bengal gram flour, red chili powder, salt, turmeric powder, asafetida in a bowl and keep ready.
  • Heat oil in a frying pan, and when it is hot, take 2 tsp from it and add it to the besan mix.
  • Add water little by little to the besan mix and knead to make a smooth dough.

  • Check for taste and add salt or red chili powder if required.
  • When oil is hot, reduce heat and take a ball of dough in the sev press.
  •  Place the sev press a few inches above the hot oil and carefully press moving in a circular motion so that fine strands  fall in the oil as shown.
  • Cook for a few minutes in low to medium flame and when the sizzling sound stops, carefully turn it to the other side and cook for a few seconds.
  • Use a spotted spoon to take it out and tap gently to remove excess oil.
  • In the same way make the remaining sev.
  • After the sev cools down completely, you can break them into pieces and transfer to an air tight container.
  • Sev stays good for a week if stored properly.
