MASALA VEGETABLE PULAO RECIPE WITH VIDEO




Masala vegetable pulao is a delicious, and flavourful variety rice recipe that can be cooked in less than half an hour. I have used pressure cooker here speed up the cooking process. Masala vegetable pulao can also be prepared for Iftar during Ramdan. Serve this delicious pulao hot with onion raita and Chicken fry or chicken masala gravy.

Ingredients

3 tbsp oil
1 large onion sliced
1/2 tsp cumin seeds
1 tbsp ginger garlic paste
1 and 1/2 tsp salt (or to taste)
1 green chilli
1 tsp red chilli powder
1/4 tsp turmeric powder
1/2 tsp garam masala powder
1/2 tsp coriander powder
2 tomatoes chopped
2 cups chopped vegetables
4 cups water
1 tbsp lime juice
2 cups basmati rice soaked in water for 1 hour







Method


  • Soak basmati rice in water for at least 1 hour
  • Heat oil in a pressure cooker.
  • Add onions and saute till onions turn golden.
  • Next add cumin seeds and allow it to sputter.
  • Then add ginger garlic paste and saute till the raw smell goes.
  • Then add salt and all the masala powders along with green chilli and mix well.
  • Then add chopped tomatoes and cook till they turn soft and mushy.
  • Next add the vegetables and mix well.
  • Then add water and bring to a boil.
  • Now add lime juice and the drained rice and mix well.
  • Close a lid and pressure cook for 3 whistles.
  • Serve hot with onion raita and chicken fry.
