PAELLA (SPANISH RICE DISH)




The authentic paella served in Spain contains an assortment of ingredients. I have given below the recipe of Paella modified  to our taste with only a few basic ingredients. It not only delicious and flavourful but is also very easy to make. You could try this dish when you wish to make something different easily and quickly.


Serves = 6


Ingredients

250 gms boneless chicken pieces cut into small pieces
3 cups rice
3 tomatoes chopped
3 capsicums chopped (green, yellow or red)
1 1/2 tbsp pepper powder
1 1/2 tbsp garlic paste
2 tsp salt
Coriander leaves

Method

First boil 8 cups of water in a vessel with 1/2 tsp salt. Simultaneously heat oil in a deep bottomed pan and shallow fry the chicken pieces till they are golden brown in colour. Then add the fried chicken pieces to the boiling water. Leave it to cook for about 20 minutes.

As the chicken pieces are boiling, add capsicum to the same deep bottomed pan and fry for sometime. When they are cooked keep them aside.

Then add finely chopped tomatoes to the same oil. Cook for sometime. Then add garlic and cook until the raw smell goes. Then add the cooked capsicum and boiled water along with the chicken pieces. Then add rice (which has been washed and soaked in water for at least 1/2 an hour). Finally add pepper powder and 1 1/2 tsp salt. Mix well. Allow it to cook until the water has evaporated and the rice is properly cooked. Garnish with coriander leaves. Paella is now ready to be served.

Optional

Add 1 tbsp lime juice along with pepper and salt.
