BEETROOT PEDA



This is an innovative recipe from my mother. Beetroot has a wonderful colour and is a rich source of nutrients which enhances the body's immunity. People who do not eat beetroot often would find it difficult not to try this one. You can try this recipe when you want to make something different. It tastes delicious and can be cooked in about 20 minutes. It does take time to grate beetroot by hand, hence you can use a food processor or can puree the chopped beetroots..


Yeilds: 10 (depending on size)
Ingredients

2 beetroots washed, skin removed and grated
1 cup milk
½ cup water
8 tbsp sugar
1 tbsp oil
2 tbsp ghee
Seeds of 2 cardamoms
2 to 3 tbsp nuts (cashews, badams, pistas and raisins)

Method

First, heat oil in a pan and roast the nuts and set aside.
Then heat water in a pan. Add the grated beetroots and milk. Mix well and allow it to cook. Keep stirring. When the beetroots get cooked, add sugar and seeds of cardamom. Mix well. Add ghee and continue stirring. When, the mixture attains a single mass, switch off the gas. Allow it to cool, take small balls and shape them as pedas. Garnish nuts on top and serve.
