Semolina or Rava ladoo is a very simple and easy to prepare sweet that gets done in less than 20 minutes. It is prepared by mixing roasted sooji with sugar, nuts and ghee and shaping the mix to form balls. The ladoos can be prepared and stored in an air tight container for later use.

1 cup semolina/rava/sooji
¾ cup sugar
4 tbsp ghee
4 tbsp warm milk (or more)
4 to 5 tbsp Chopped cashew nuts and raisins
¼ tsp cardamom powder
Method
- Heat 1 tbsp ghee in a pan and roast the cashews till golden.
- Transfer the cashews to a plate and add raisins to the pan. When the raisins puff up, transfer this to a plate as well.
- Add another tbsp of ghee to the same pan and add semolina. Roast for a few minutes in low flame till a nice aroma comes out.
- Switch off the gas and allow it to cool down completely.
- Add sugar and grind to a powder. (You can grind it coarse or fine according to your preference.)
- Now transfer this to a bowl, add the roasted cashews and raisins, cardamom powder and mix well.
- To this add 2 tbsp of hot melted ghee and mix.
- If the mix is very dry, add 1 or 2 tbsp of warm milk.
- Grease your hands with ghee and take small balls of the mix and shape to form ladoos. If necessary add some more milk. (This recipe makes 12 to 15 ladoos). After preparing all the ladoos, set aside for a few minutes to cool down. The ladoos will harden on cooling.
- Semolina ladoos are now ready to be served.
Note:
You can skip milk and replace it with ghee if you wish to increase the shelf life of the ladoos.
