GOAT TROTTERS CURRY/ PAYA KA SALAN/ HOW TO MAKE MUTTON PAYA CURRY (ATTUKAAL PAYA) AT HOME




Mutton Paya curry or Goat Trotters curry is a delicious curry often served with string hoppers (idiyappam) or Paratha. It is slightly spicy and has a soup like consistency. Mutton Paya curry is very popular in Southern India. Usually it is slow cooked. But in this recipe, I have used a pressure cooker. This makes cooking fast and tasty Mutton trotters curry is ready in just 30 minutes. 




Ingredients

Goat trotters 16 pieces
4 tbsp oil
1 cardamom
1 cinnamon
1 onion finely sliced
1 tbsp garlic paste
1 tbsp ginger paste
1 ½ tsp red chilli powder
1/2 tsp garam masala powder
3 large tomatoes pureed
½ cup chopped coriander leaves
3 tbsp coconut paste
1 tsp salt (or to taste)
1 tsp lemon juice
6 to 8 cups water (depending on how thick you want the curry to be)

To clean the trotters
1/2 cup wheat flour


Method
  • Take wheat flour/ Atta in a bowl and add the trotters into it. Mix well and rub the trotters one by one with flour. This step removes all the hair or any impurities from the goat trotters.
  • Then rinse well with water.
  • Soak the Trotters in clean water for at least 2 hours. This step makes the trotters get puffed up and well cooked.
  • To prepare the Paya curry/ Goat trotters curry, heat oil in a pressure cooker, add cardamom, cinnamon and onions and saute till the onions turn golden.
  • Then add ginger and garlic paste and saute till the raw smell goes.
  • Add red chilli powder, garam masala powder, tomato puree and cook for a few minutes till oil starts separating.
  • Now add the paya/ Goat trotters, coriander leaves, coconut paste, salt, lemon juice and water.
  • Bring the curry to a boil, close the pressure cooker lid and cook for about 15 minutes or 13 to 14 whistles.
  • Open the lid and check for taste. Add salt or pinch of pepper powder if necessary. 
  • Also check if the trotters are well cooked and soft. If not, close the lid again and cook for 5 to 6 more whistles. 
  • Allow the steam to escape and transfer the Curry to a serving bowl.
  • Serve hot with Paratha or String Hoppers.
