EGG SAMOSA RECIPE WITH STEP BY STEP PICS

 


Hi friends, today I am sharing the recipe of Egg samosa. This is a Samosa which does not require many ingredients and tastes crispy and delicious. You can make these Egg samosas when you have parties or get togethers at home or also serve as a breakfast or snack with tea in the evening.

Here I have used half All purpose flour/ maida and half Wheat flour to make the Samosa dough. If you want a crispier and flaky samosa, you can use only All purpose flour. And for a healthier option, you can use only wheat flour to make the dough. 

These Egg samosas are also ideal snacks that you can take for Potlucks or picnics as they taste great even after they cool down. Make sure not to close the lid of the container in which you carry them as moisture can make them soggy.




Let's move on to the recipe of making Egg Samosas

Ingredients

For the samosa
1 cup All purpose flour/ Maida
1 cup Wheat flour/ Atta
1 tsp salt (or to taste)
1/3 cup oil
water as needed

For the egg filling
3 large eggs
2 onions finely chopped
2 tsp ginger garlic paste
1/2 cup coriander leaves
1/2 tsp red chilli powder (or to taste)
1 tsp salt (or to taste)
4 tbsp oil

Method

To make the samosa dough

  • Take a bowl and add salt, flour, and oil. 
  • Mix well, then add water little by little and knead for a few minutes to make a smooth and firm dough. 
  • Close a lid and set this aside for ½ an hour.

To prepare the egg filling

  • Heat oil in a pan, add onions and saute for a few minutes till onions turn golden.
  • Add ginger and garlic paste and saute till the raw smell goes.
  • Next add salt, red chilli powder and chopped coriander leaves and mix well.
  • Crack open the eggs and add to the pan one by one.
  • Keep stirring in medium flame for a few minutes till the eggs are cooked and well mixed with the onions.
  • Switch off the flame and allow the filling to cool down.
  • Egg filling is now ready.


Rolling the samosa dough to get layers

  • Take the dough, and divide it into small lemon sized balls. (The dough should be this firm but yet easy to roll.)
  • Take 1 ball and roll such that you get a circle. Sprinkle flour and cut the rolled circle into 4 parts. Stack them as shown and again roll to form a square.


  • In the same way make more squares and keep ready.
  • Now place 1 tbsp of the egg filling at the center of each rolled square, apply some water mixed with flour at the edges.(Dissolve 1 tbsp of flour in 2 tbsp of water and apply a small amount of this at the edges of every samosa.)
  • Carefully close to form a triangle and press lightly, making sure that the stuffing does not come out. 
  • In the same way make more samosas and keep ready.




  • Once the samosas are filled and ready, heat oil in a frying pan. 
  • Add a small piece of dough to the oil, if it immediately rises to the surface, then oil is ready. 
  • Now deep fry the samosas in oil, in medium flame, 2 at a time, till golden brown in color. Turn it once or twice till the samosas are even colored and golden brown. It will take about 2 minutes to cook one set.
  • Transfer to a tissue paper to remove excess oil. Do the same thing with the rest of the samosas. Serve hot as it is or with tomato sauce.




Tips
  • Make sure that the dough is not sticky and is firm.
  • While rolling one ball of dough keep the rest covered as they might dry out and develop cracks on rolling.
  • After rolling, do not stack on top of each other, use 2 to 3 plates to keep the rolled dough.
  • Oil should be at the right temperature, so adjust the temp of oil as necessary. If it is at a low temp, the samosas will soak more oil and would become soggy whereas very high heat will turn the samosas to dark brown in color and it might not be properly cooked.
  • If you are cooking alone, then it is better to roll, say about 10 samosas, fill the stuffing, apply the flour-water mix, close the samosa and keep the entire 10 ready for deep frying in oil. Once the 10 samosas are cooked, you can switch off the gas, prepare the next batch, heat oil and deep fry the samosas.
  • Try to get help from family members to speed up the cooking process :)
