Ridge gourd is one vegetable which is full of nutrients but is not preferred by most people. Today I am sharing my mom’s recipe of ridge gourd made with eggs in tomato gravy, which is so delicious that it will become a regular at your home.


2 tbsp oil
3 turai/ tori/ ridge gourd skin removed and chopped
2 eggs
1 onion chopped
1 tsp red chilli powder
1 tbsp garlic paste
1 tbsp ginger paste
3 tomatoes pureed
¾ tsp salt
2 cups water
Chopped coriander leaves
¼ tsp lemon juice (optional)

  • Heat oil in a pan, add onions and sauté till golden.
  • Then add ginger garlic paste and sauté till the raw smell goes.
  • Next add in red chilli powder and salt and mix well.
  • Now add tomato puree and cook till oil starts separating.
  • Add the chopped ridge gourd and 2 cups water and bring to a boil.
  • Reduce heat, close a lid and cook for 10 to 15 minutes till the ridge gourd is cooked.
  • Finally add eggs and coriander leaves and mix well.
  • Make sure that the eggs are cooked and most of the water has evaporated.
  • Check for taste, add salt, or lemon juice if necessary and serve hot as a side dish with rice and dal.
