AFGHANI MUTTON PULAO IN A PRESSURE COOKER WITH VIDEO




Afghani mutton pulao is a delicious and flavourful pulao made with mutton pieces and basmati rice. The specialty of this recipe are the nuts, dried fruits and caramelized carrots which add a crunchy and sweet taste to the mildly spiced pulao. You can try this recipe when you wish to try something new and taste something different and delicious.

Serves: 4 to 6
Ingredients

1 cup oil
2 onions thinly sliced
1 heaped tbsp ginger garlic paste
1 tsp each red chilli, coriander and cumin powders
salt to taste
500 gms mutton pieces
500 gms/ 4 cups basmati rice
6 cups water

For garnishing

1 long carrot cut into strips
4 tbsp sugar
1 cup water
2 tbsp ghee
2 tbsp each cashews and almonds chopped
1 tbsp raisins






Method

  • Wash and soak the basmati rice in water for 1 hour.
  • Heat 1 cup oil in a pressure cooker.
  • Add 2 onions thinly sliced and saute till the onions turn golden.
  • Then add ginger garlic paste and saute till the raw smell goes.
  • Add red chili powder, coriander powder, cumin powder and salt and mix well.
  • Add the mutton pieces and mix well.
  • Add 2 cups water and close the lid of the pressure cooker and pressure cook for 4 whistles.
  • The mutton has to be 90% cooked. If not, cook for a few more whistles.
  • Once done, open the lid and add 4 cups water and bring to a boil. (Add 1/2 cup more if the mutton has taken long time to cook)
  • Drain away the water from the basmati rice and add the rice to the cooker and stir well.
  • Check for taste and add salt if necessary and close the lid.
  • Pressure cook for 2 whistles.
  • Meanwhile heat 4 tbsp sugar in a sauce pan and when it starts getting golden brown colour (caramelizing), switch off the gas and add 1 cup water. 
  • Mix well and then add sliced carrots. Cook for a few minutes till most of the water has evaporated and the carrots are cooked. Switch off the flame and keep ready.
  • Next heat another pan, add ghee and roast the chopped cashews, almonds and raisins till the nuts turn golden and the raisins puff up. Transfer this to a bowl and keep ready.
  • Once the steam has released from the cooker, open the lid and gently mix the pulao.
  • Transfer the pulao to a serving bowl and garnish with ghee roasted nuts and caramelized carrots.
  • Serve hot.
