BOILED EGG MANCHURIAN

Manchurian is a spicy and delicious Chinese delicacy. I have shared recipes of Chicken Manchurian, Gobi ManchurianPaneer Manchurian, Idli Manchurian in my earlier posts and today, I am going to share a delicious and flavourful recipe of Egg Manchurian that I tried recently. I didn’t have capsicums in my pantry so I did not add it to the dish. But adding it will make the dish taste more flavourful.

Ingredients

3 hard boiled eggs

For the batter

3 tsp corn flour
3 tsp rice flour
½ tsp red chilli powder
¼ tsp salt
Oil for frying

For the sauce

4 tbsp oil
1 large onion finely chopped
2 tomatoes pureed
1 tsp garlic paste
1 tsp ginger paste
½ tsp salt (or to taste)
½ tsp pepper powder
1 tbsp soya sauce
1 tsp green chilli sauce
Chopped coriander leaves
Spring onion greens finely chopped

Method

  • Cut each boiled egg into 4 pieces longitudinally and keep ready.
  • Take rice flour, corn flour, and salt and chilli powder in a bowl and add little water to form a paste.
  • Heat oil in a pan or kadai and when oil is hot, using a spoon dip the egg in the batter and carefully add to the hot oil. In the same way add all the egg slices.
  • Fry the eggs in medium flame till they turn slightly golden. This will take only a minute or two.
  • Carefully transfer to a plate and keep ready.
  • For preparing the sauce, heat oil in a pan.
  • Add onions and fry in high fame till they turn golden.
  • Then add garlic paste and ginger paste and sauté till the raw smell goes.
  • Next add salt and pepper powder along with tomato puree and mix well.
  • Cook for 2 to 3 minutes, till oil starts separating.
  • Next add soya sauce, green chili sauce and mix well.
  • Add coriander leaves, spring onions and corn flour dissolved in 1 cup water and bring to a boil.
  • Finally add the boiled eggs and mix well.
  • Cook in low flame for a couple of minutes and switch off the gas.
  • Transfer to a serving bowl and serve hot with Paella, Fried rice or Noodles.
