SEVIYAN KA ZARDA/ HOW TO MAKE VERMICELLI SWEET/ SWEET VERMICELLI RECIPE




Seviyan ka Zarda or Sweet Vermicelli is a simple, easy to cook and delicious sweet that is often made during Eid and other special occasions. I also prepare this delicious sweet for Sunday lunch. Making Seviya ka zarda requires very few ingredients and gets cooked in less than half an hour.

Ingredients

100 gms roasted short Vermicelli/ Seviyan/ Semiya
2 and 1/2 cups sugar
2 cups water
yellow food colour (optional)
3 tbsp ghee
3 tbsp chopped cashews and almonds

Method

  • Boil the vermicelli in sufficient water for about 5 to 10 minutes till they are cooked but still hold shape.
  • Srain away the excess water using a Strainer and keep the cooked Vermicelli ready.
  • Take sugar and water in a pan and bring to a boil. Cook for about 8 to 10 minutes. Then add food colour and the cooked vermicelli to this and mix well. When the mix starts coming together. Switch off the gas.
  • Heat ghee in another pan, add the chopped dry fruits and saute till they turn golden. 
  • Add the roasted nuts along with ghee to the Semiya/ Vermiceli and mix well.
  • Serve warm.




Note
  • You can also use milk in place of water when making the sugar syrup for more flavour.
  • Adjust the quantity of sugar as per your taste.
  • Don't cook the vermicelli for a very long time. It will turn sticky.
  • Try to use thin vermicelli.
  • If you don't have roasted vermicelli, fry the vermicelli in 3 to 4 tbsp ghee.
  • If your vermicelli is long, break it into pieces before cooking.
  • Here I have boiled vermicelli separately and mixed with sugar syrup later as we like soft Seviyan Zarda at home, you can alternately add the roasted vermicelli directly to the sugar syrup and adjust water accordingly.
