KADAI CHICKEN GRAVY/HOW TO MAKE RESTAURANT STYLE KADAI CHICKEN AT HOME




Kadai Chicken is a popular chicken gravy made with tomatoes, capsicums and spices. Kadai chicken gravy is one of my favorite chicken dishes as it is spicy, delicious and bursting with flavors of the masalas used. Kadai Chicken is usually prepared with Kadai masala where spices are roasted and powdered and then used in the gravy. But here I have skipped the step and used ready made spice powders to speed up the process of making Kadai Chicken gravy. The Kadai chicken gravy comes out awesome every time I make it. Kadai Chicken tastes best when served with Roti, Paratha or Naan. 

Here I have omitted adding slightly sautéed squares of capsicums and onions at the end as my family is not very fond or it. Do add them as it adds a crunch to the Kadai chicken.

Ingredients

350 gms boneless chicken cut into pieces
1/4 capsicum finely chopped
1 onion thinly sliced
4 tbsp oil
1/2 tsp cumin seeds
3 tomatoes de seeded and pureed
2 tsp ginger garlic paste
1 and 1/4 tsp red chilli powder (or to taste)
1 tsp coriander powder
1 tsp cumin powder
1 and 1/4 tsp garam masala powder
¼ tsp turmeric powder
handful of coriander leaves
2 tbsp fresh cream
1/2 capsicum cut into squares
1/2 onion cut into squares
Salt to taste
1 cup water

Method
  • Heat oil in a wok or kadai and add cumin seeds. 
  • Allow the seeds to sputter and then add onions and capsicums. Sauté till the onions and capsicums turn golden. 
  • Next add ginger garlic paste and sauté till the raw smell goes.
  • Then add chicken pieces and mix well.
  • Add  red chilli powder, coriander powder, cumin powder, turmeric powder, garam masala powder and salt and mix well.
  • Next add tomato puree and cook for a few minutes till oil starts separating.
  • Then add 1 cup of water and bring the gravy to a boil.
  • Close a lid, reduce flame to low and cook for 10 to 15 minutes or till the chicken is cooked.
  • Meanwhile heat another pan with 2 tbsp oil and lightly sauté the capsicum and onion squares.
  • Add the sautéed capsicum and onions along with coriander leaves to the Kadai Chicken and switch off the gas.
  • Add some fresh cream and give it a mix.
  • Transfer the Kadai chicken gravy to a serving bowl.
  • Serve hot with roti, Paratha or Naan.
