Ladies Finger or Vendakkai/ Bhindi is a very delicious and popular vegetable that is loved by most people across India. From kids to elders, everybody likes this yummy vegetable. Ladies Finger stir fry or Vendakkai poriyal or Bhindi poriyal is easy to make and is a great side dish to serve with white rice, Sambar and ghee. Do try out this yummy Ladies finger stir fry or Vendakkai poriyal recipe for lunch or dinner.
500 gms Ladies finger (washed, pat dried with cloth and cut into very thin slices)
8 tbsp oil
1 onion sliced
1 tsp mustard seeds
2 dry red chillies, deseeded
1 tsp garlic paste
1 large tomato pureed
1/4 tsp turmeric powder
1/2 tsp red chilli powder
3/4 tsp salt (or to taste)
Water as needed
Method
- Divide the sliced ladies fingers into 2 or 3 batches.
- Take a thick bottomed non-stick pan, and add 2 tbsp of oil. Add one batch of Ladies finger and saute for a few minutes till they change colour to bright green. Transfer to a plate and keep ready.
- In the same way, stir fry the second and third batch of Ladies fingers, adding oil as necessary and transfer to the plate.
- Now, heat remaining 2 tbsp oil in the same pan, add mustard seeds and allow them to sputter.
- Add onions, and dry red chillies and saute till the onions turn soft.
- Now add the garlic paste and saute for a few seconds till the raw smell goes.
- Add turmeric powder, red chilli powder and salt and mix well.
- Add the tomatoe puree and saute for a few minutes till oil starts separating.
- Now add the stir fried ladies fingers and mix well.
- Add about 1/4 cup of water and bring to a boil.
- Reduce heat to low, close a lid and cook for about 2 minutes.
- When all the water has evaporated and the ladies finger are soft and cooked, switch off the gas.
- Transfer to a serving bowl and serve hot with white rice and dal curry or with chapathi or any other variety rice of your choice.
