IFTAR SPECIAL- BADAM HAREERA RECIPE



Badam hareera or Almond Milk is a healthy and nutritious drink made using milk and almonds. Badam Hareera is commonly prepared for Iftar during the holy month of Ramadan. At home, Badam Hareera is a must have drink in the Iftar table. It is also a favourite drink for everybody at home as it is so delicious!  

At the time of breaking the fast, Badam Hareera gives the much needed energy and nutrients to the body. .
Badam Hareera can be served hot or cold. We usually like Cold Badam Hareera so I make this Hareera in the morning. After it comes to room temperature, I refrigerate the Badam Hareera for a few hours and serve it Cold for Iftar. 

Badam Hareera takes very little time to cook and needs very few ingredients.You can also add a pinch of saffron to the milk to make it more flavourful. Here I have shared the recipe of making Badam hareera that makes 4 cups. You can increase the proportion of ingredients to make more.


On normal days apart from Ramadan too, Badam Hareera can be served for Breakfast or as a mid morning drink. It is a great favourite among kids and an excellent way to include almonds in their diet.

Ingredients

15 almonds/ badam
1/2 litre milk
1 tbsp raw rice
1/2 cup sugar (or to taste)
1 cardamom
1 inch cinnamon stick

Method

  • Wash and soak rice in water for at least 15 minutes.
  • Soak the almonds in hot water for at least half an hour. Hot water will help the skin of the almonds to come out easily. (you can alternately soak almonds in normal water for 5 to 6 hours)
  • Peel and discard the skin of the almonds, chop the almonds into small pieces and transfer it to a mixer jar.
  • Drain the water from the rice and add the rice to the mixer jar.
  • Add 2 or 3 tbsp water and grind the almond-rice mix to a fine paste.
  • Transfer this to a bowl and keep ready.
  • Heat milk in a pan and when it starts boiling, add sugar, cardamom and cinnamon.
  • Mix well and reduce the flame to low.
  • Add 1/3 cup water to the ground paste and mix well. (This will help in preventing lumps when you add the paste to the milk)
  • Now add the diluted paste to the milk while stirring continuously.
  • You have to keep stirring at this stage to prevent any lumps.
  • Increase the heat and cook for 5 to 7 minutes while stirring in between.
  • When the hareera has come to a boil, and has thickened, it is cooked.
  • You can check for taste and add more sugar if required.
  • Switch off the gas now and allow the Hareera to cool down completely.
  • Transfer the Badam Hareera to a serving Jug and refrigerate for 2 to 3 hours.
  • Pour the Badam hareera into cups and serve cold.



Some people like to drink Badam Hareera hot, in that case you can warm the hareera just before Iftar and serve hot.
