This is the softest and spongiest Zebra cake recipe that you would have come across. And this recipe of Zebra cake does not need eggs and also does not need an oven. The Zebra cake comes out perfectly cooked, soft, spongy and delicious.
Zebra cake is basically a sponge cake where we alternately add vanilla and chocolate sponge cake batters to the baking pan in small quantities to get a circular pattern. We then make a beautiful pattern on the cake batter using a toothpick. Since the Cake looks black and white and resembles the stripes of a Zebra, it is called a Zebra Cake!
The cake batter of Zebra Cake has to be moderately thick and not very thick or thin. Thin batter of the cake would lead to the vanilla and chocolate layers getting merged when you are making the patterns and will not give a proper Zebra stripes pattern. Similarly very thick cake batter will not spread easily as you keep adding the cake batters. So please be careful on the consistency and thickness of the cake batter.
This recipe of Eggless Zebra cake uses oil and curd. Make sure you use good quality flour, baking powder and curd for making this Eggless Zebra cake. Further try to use a colourless vanilla essence to get a white batter.
Eggless Zebra cake needs no frosting as it looks so good and this is an ideal cake you can serve with tea or coffee in the evenings. Your kids would love this Eggless Zebra cake as it looks so beautiful. My family loved this Eggless Zebra cake for its design, texture and taste. Vegetarians can make this Zebra Cake as this does not contain any Egg.
Now, lets head on to our recipe of making the softest and delicious Eggless Zebra Cake!
Ingredients required for making Eggless Zebra Cake
1 cup all purpose flour/ Maida
1/2 cup thick curd
1/2 cup sugar
1/4 tsp baking soda
1 tsp baking powder
1/4 cup oil (I used sunflower oil)
1/2 tsp vanilla essence
1/2 tbsp cocoa powder
2 or 3 tsp water (or as needed)
1/2 tbsp cocoa powder
2 or 3 tsp water (or as needed)
Method
- Take sugar in a blender and grind to a fine powder. Keep ready.
- Take curd in a bowl, add powdered sugar and mix well.
- Meanwhile take a pressure cooker, add 1 cup salt and place a stand on it. Remove the gasket and whistle and close the lid of the cooker. Heat in medium to low flame for 10 minutes.
- Add vanilla essence and oil to the curd-sugar mix and whisk well.
- Sieve all purpose flour, baking powder, and baking soda and add this little by little to the cake mix.
- Whisk well such that there are no lumps.
- Add 2 or 3 tsps of water and whisk well. The batter has to be slightly thick, not very thick.
- Divide the batter into two bowls. Take cocoa powder in a small bowl, add 2 or 3 tsp of water and mix well. Add this cocoa paste to one bowl and mix well.
- Now to get the Zebra cake pattern, take your greased aluminium pan, add a tbsp of vanilla batter, then add a tbsp of cocoa batter and keep repeating the steps till you have exhausted all the batters.
- You will get a beautiful circular pattern now.
- Now take a toothpick and from the centre, run it to the edge of the pan. Do like this 3 more times to form a + shape.
- Now, in between these lines, run your toothpick from the edge to the centre.
- You will get a beautiful pattern like this.
- Now place your cake pan inside the pressure cooker, that has been preheating.
- Close a lid, cook in medium flame for 10 minutes, then reduce flame to low and cook for 15 to 20 minutes or till a toothpick inserted comes out clean.
- Allow the cake to cool down completely, then invert it into a plate and cut into small pieces.
- Eggless Zebra cake is ready to be served.
Baking cake in Otg Oven
You can also make this Eggless Zebra cake in your Otg oven. For this preheat oven at 180 degree C for 10 minutes. Then place the prepared cake tin with the batter in the middle rack of the oven and bake at the same temperature with only the lower rods On for 25 to 30 minutes. Once done, the cake will leave the sides of the pan. Now take a toothpick/ bamboo stick and insert it inside the cake. If it comes out clean, then cake is cooked. Otherwise, cook for 5 to 10 more minutes. Allow the cake to cool down, cut and serve!
