Hi friends welcome back to my blog. Today I am going to share my secret recipe of vegetable cutlet. The cutlet tastes amazing and comes out perfectly crunchy on the outside and soft inside.
You can make these Vegetable cutlets in large batches and freeze them. This is also a perfect recipe you can try when you have guests visiting your home for parties and perfect snack during Iftar.
So lets move to the recipe of making Perfectly fried Vegetable cutlets at home.
Ingredients
3 tbsp oil
6 large potatoes (approx 500 gms)
1 onion finely chopped
1/2 cup shelled peas
1 carrot finely chopped
1 onion finely chopped
1/2 cup shelled peas

2 tsp ginger garlic paste
6 tbsp bread crumbs
Salt to taste
1/2 tsp red chilli powder
1 tsp cumin powder
1 tsp amchur powder
1 tsp garam masala powder
1/4 tsp turmeric powder
Handful of coriander leaves finely chopped
Salt to taste

Oil for frying
For dipping
1 egg/ or (maida + water mix)

Method:
- Pressure cook the potatoes, carrots and peas with 1 cup water and 1/4 tsp salt for 3 whistles.
- Once the steam has escaped, open the lid and transfer the vegetables to a strainer so that any extra water gets strained.
- Then transfer to a wide plate and mash them.
- Allow the vegetables to cool down completely.
- Then heat a pan, add oil and add onions.
- Saute till the onions turn golden and next add ginger garlic paste.
- Saute for a minute till the raw smell goes and then add all the masalas mentioned in the ingredients.
- Now add the boiled veggies and coriander leaves and mix well.
- Keep mixing to avoid the mix from sticking to the pan.
- Once it is well mixed, switch off the gas.
- Transfer the mix to a plate and allow the mix to cool down completely.
- Add bread crumbs and mix well to form a dough shape.
- Check for taste and add salt or chilli powder if necessary
- Then take bread crumbs in a bowl and crack open an egg in another bowl. Whisk the white and yolk well and keep ready.
- If you are a vegetarian you can replace egg with a mix of maida and water.
- Now take small balls from the cutlet mix, make long cutlet like shapes, dip in egg then in bread crumbs and keep aside in a tray.
- In the same way make the remaining cutlets.
- Now heat oil in a pan and deep fry the cutlets till they turn golden brown in color.
- Transfer to a plate lined with tissue paper and serve hot with tomato ketchup.
