PAV BHAAJI




Pav Bhaaji or Buns (pav) toasted in butter and served with hot and spicy vegetable gravy (bhaji) is a very popular Indian snack. It is an easy to make, flavourful and a delicious snack that you can make during evenings or when you wish to skip from the regular rice and chapathi. Serves: 4
Ingredients

2 tbsp oil
2 tbsp butter
1 capsicum chopped
2 onions chopped
½ tbsp garlic paste
½ tbsp ginger paste
2 big tomatoes washed and pureed
3 tbsp pav bhaji masala powder
3 potatoes
¾ cup peas
1 tsp Salt or to taste
3 tbsp Coriander leaves



Method


  • Steam the potatoes and peas, and when the vegetables are slightly warm, mash them coarsely and set aside. 
  • Heat oil and butter in a pan, add 1½ onion, sauté till they turn golden, then add garlic and ginger paste. 
  • Mix well, and add capsicums, and saute for some time.
  • Then add tomato puree and mix well. Cook till the oil starts separating. 
  • Then pav bhaji masala powder, and mix well.
  • Finally add the vegetables, 2 cups water, coriander leaves and salt and bring to a boil. 
  • Close a lid and cook under low heat for about 10 minutes. 
  • Transfer to a serving bowl and garnish with chopped onions and coriander leaves. Serve hot with lemon wedges and butter roasted buns.
