Cookies are a great tea time snacks. I have shared several recipes of cookies and biscuits in my blog like mini butter cookies, whole wheat cookies, chocolate cookies, chocolate chip biscuits, nan khatai and chocolate chip cookies. And in today's post, I will be sharing a healthy and delicious recipe of cookie made with Finger millet flour/ Ragi. These Ragi cookies are crunchy, healthy and delicious.

Ingredients

1/2 cup Ragi flour/ Finger millet flour
1/2 cup whole wheat flour
1/2 cup powdered sugar/ brown sugar
1/2 cup milk (or as needed)
1 tsp baking powder
1 tsp vanilla essence
1/4 cup butter

Method

  • Place the butter outside the refrigerator. Butter has to come to room temperature, only then it will be soft and easy to mix.
  • Dry roast the ragi flour in a non stick pan for 5 to 10 minutes till you get a nice aroma.
  • Take wheat flour, roasted ragi flour, baking powder in a bowl and mix.
  • Add butter and vanilla essence and mix well so that you get a crumb like texture.
  • Add milk little by little and knead to form a smooth dough.
  • Place this inside the freezer for half an hour and then use the dough to make the cookies.
  • Preheat oven at 180 degree celsius for 10 minutes.
  • Grease a baking tray with butter and keep ready.
  • Take small portions from the dough and press between your hands to make small cookies.
  • Place the cookies on the baking tray at equidistant intervals and place the tray in the central rack of the oven with only the lower rods On.
  • Bake at the same temperature for 10 to 15 minutes till you see browning at the sides.
  • Take the cookies out. They will harden on cooling.
  • Transfer to an airtight container after the ragi cookies come to room temperature and serve.
  • This recipe makes approximately 18 cookies.
