JODHPURI VEGETABLE PULAO




I first came across this dish in chef Sanjeev Kapoor's cookery book. From that time, I have made this pulao several times with some changes to suit our taste. Every time the pulao comes out perfect and tastes divine. Make this at your home and serve this delicious pulao for lunch or dinner if you wish to give a royal treat to your family. Ingredients

3 tbsp ghee
1 tsp cumin seeds
12 cashews roughly chopped
12 almonds roughly chopped
1 tbsp garlic paste
1 tbsp ginger paste
12 raisins
1/2 cup curd
1/4 cup shelled peas
1/4 cup chopped carrots
1/2 tsp garam masala powder
2 cups Basmati Rice soaked in water and drained
1 tsp crushed black pepper
3 cups water
Salt to taste







Method

  • Melt 2 tbsp ghee in a pressure cooker.
  • Add cumin seeds and saute for a few seconds till fragrant.
  • Add cashews and almonds and stir till they turn golden.
  • Add ginger and garlic paste and saute till the raw smell goes.
  • Next add in raisins and salt and mix well.
  • Add carrots and peas and give a quick stir.
  • Now add garam masala powder, curd, drained rice and water and mix well.
  • Close the lid of the cooker and pressure cook for 3 whistles.
  • Once all the steam has come out, open the lid and add 1 tbsp ghee and crushed black peppercorns.
  • Mix gently and serve hot.
