This is a very simple and easy to make biscuit recipe. I came across this recipe at Menu Rani Chellam’s cookery show where she made Hyderabadi or dry fruit biscuits. The original recipe called for tutti frutti or cherries but I replaced it with chocolate chips and cashews. You can either use chocolate chips or chop the regular chocolate into small pieces.
Ingredients
1 cup All purpose flour (Maida)
½ cup powdered sugar
¾ cup margarine (at room temperature)
½ tsp cardamom powder
30 gms Cadbury chocolate chopped
Cashew nuts chopped
Method
Take a bowl, add maida, sugar and cardamom powder and mix well. Then add margarine little by little and knead to form a smooth dough. Divide this into two balls. Meanwhile preheat the oven at 150 degrees. Take one dough ball and transferred this to a greased tray and press with a spatula in the same way as you press for a burfi. Add cashews and chocolate chips on top and add another layer of the dough over it. Press and again and layer it with cashews and chocolate chips. Run a knife through the pressed dough and cut it into squares of equal size. Transfer this to a greased and floured tray leaving ample space at the sides and bake it in the central rack of the oven at 150 degrees for about 20 minutes. Allow the biscuits to cool and transfer it to an air tight container. This recipe makes approximately 24 biscuits and has a shelf life of about a month.
cardamom seems like such a nice touch to those biscuits! I like the idea of tuti fruity and dried fruits too!
