CHICKEN TIKKA MASALA




Chicken Tikka Masala is a popular chicken delicacy known the world over. Here boneless chicken is marinated in a host of spices and curd and grilled to perfection. It is then cooked with delicious and spicy gravy made of tomatoes and cream.  Chicken Tikka is often prepared in a tandoor, but we can also make use of our otg to make the Chicken Tikkas at home. Chicken Tikka can also be served as an appetizer with sliced onions and green chutney.

Ingredients

300 gms boneless chicken cut into small pieces

For the marinade
3 tbsp curd (yoghurt)
1 tsp red chilli powder
1 tsp cumin powder
1 tbsp garlic paste
1 tbsp ginger paste
½ tsp salt
1 ½ tsp chicken tikka masala
1 tbsp lemon juice

For the gravy
4 tbsp oil
2 large onions chopped and blended to a paste
1 tsp garlic paste
1 tsp ginger paste
4 medium sized tomatoes deseeded and blended to a paste
½ tsp red chilli powder
1 tsp cumin powder
1 tsp coriander powder
½ tsp salt
½ cup cream or whole cream milk
Coriander leaves

Method:

Step 1: Marinating the Chicken

Clean the chicken pieces and wash several times with water. Drain the excess water and keep the pieces ready. Then take a bowl and add all the ingredients of the marinade. Mix well to form a smooth paste. Check for taste and add salt or chilli powder if necessary. Then add the chicken pieces and mix well with the masala. Transfer to an air tight container and place it in the refrigerator overnight (i.e. for 10 to 12 hours). The longer it marinates the better will be its taste. But if you are in a hurry you can skip this step and marinate it for at least 1 hour.

Step 2: Preparing the Chicken Tikka




Now to prepare the chicken Tikka, we can use our oven/ otg. Preheat the oven at 200 degree Celsius for 10 minutes with upper and lower rods on. Place a baking tray at the bottom to prevent juices from the chicken from falling on the heating rods below. While the oven is getting heated, grease the skewers with oil and insert the marinated chicken pieces. Make sure to leave some space between each chicken piece. Now place the skewers on the grill rack, place it in the central rack of the oven and grill for about 10 minutes. Then carefully remove the grill rack from the oven using the holder and brush the chicken pieces lightly with oil. Put it back in the oven and grill again for 15 to 20 minutes till the chicken is cooked. You can cook for some more minutes if you want the outer layer to be a little hard. Once done, remove the skewers from the oven and allow it to cool down completely. Carefully pull out the chicken tikkas and keep ready.

Step 3: Preparing the Chicken Tikka masala

To make the gravy for the chicken, heat oil in a pan, and carefully add the onion paste. Stir well and cook till the raw smell goes. Next add ginger garlic paste and saute for some time. Then add red chilli powder, salt, coriander and cumin powders and mix well. Then add tomato paste and cook till oil starts separating. Next add coriander leaves and 1/2 cup of water and bring to a boil. Cook for a minute in high flame, then reduce the heat, close a lid and cook for 5 minutes. When all the masalas are combined well, add cream or milk and stir for a few minutes till the gravy thickens. Finally add the Chicken Tikkas and mix well. Chicken Tikka masala is now ready to be served. Garnish with fresh cream and coriander leaves and serve hot with Roti or Naan.
