QUICK CHICKEN MACARONI IN A PRESSURE COOKER





During Ramadan, a number of delicacies are prepared for Iftar. So most of us often look for recipes that are delicious and quick to make. In today’s post I am sharing my mother’s recipe of delicious chicken macaroni which gets cooked in just 20 minutes. This is a regular dish at our iftar table and on normal days we prepare it for breakfast.


Ingredients

200 gms boneless chicken
250gms macroni
1 large onion finely chopped
2 tbsp ginger garlic paste
3 tomatoes puréed
Chopped coriander and mint leaves
1 cardamom
1 cinnamon
4 tbsp oil
1 ½ tsp chilli powder
1 ½ tsp salt
¼ cup curd

Method

  • Heat oil in a pressure cooker and add cardamom, cinnamon and chopped onions.
  • Cook for a few minutes till the onions turn soft.
  • Now add ginger garlic paste and sauté till the raw smell goes.
  • Next add red chilli powder, salt and tomato puree and cook till oil starts separating.
  • Next add chicken and curd and mix well.
  • Measure macaroni in a measuring cup and add to the cooker.
  • Add double the quantity of water and mix well. (E.g. for 1 cup of macaroni, add 2 cups of water)
  • Finally add chopped coriander and mint leaves and check for taste.
  • Close the lid and pressure cook for 2 or 3 whistles.
  • Serve hot.
