SOFT GHEE MYSORE PAK RECIPE WITH VIDEO/ EID SPECIAL SWEET RECIPE




Hi friends, Wishing you a very joyful, peaceful, healthy and happy Eid! As we are facing the Corona Pandemic, we are not able to visit our family, relatives and friends for EID-UL-FITR celebrations. But let this not dampen the spirit of Eid. Let us all unite and greet each others through phone calls, video calls, voice messages, chats and sms and show our love and care for each other on this special day. Let us make it a Special Eid for all of us as we might be separated by Corona but our hearts are still connected!

To celebrate Eid-ul-Fitr, I made Mysore Pak at home. Mysore pak or Mysore Pa is one of the most popular and delicious sweets in India. Besan/ gram flour, ghee (clarified butter) and sugar are used to prepare this delicacy. I have already shared the recipe of melt-in-the-mouth, soft ghee mysore pak in one of my earlier posts with step by step pictures and in this post will be sharing the recipe with video.

Mysore Pak comes out perfect every time, hence I often make it at home, during festivals and special occasions. Mysore Pak has the wonderful flavour of ghee, the sweetness of sugar and it justs melts in the mouth. This Ghee Mysore Pak tastes just like the Soft Mysore Paks you get in sweet shops/ Halwai shops.


Hope you will try out this recipe of Mysore Pak at home. It is really delicious and uses ingredients that are available in all our kitchens. No body can believe that such an exotic looking and flavourful Mysore Pak sweet requires just 3 ingredients.

Getting the perfect one string consistency is very essential to make a perfect Mysore pak. Further Mysore pak gets cooked really fast and you have to be careful as to when to take it out of the stove to get the perfect soft texture in the mysore pak. I have also shared some tips along with video below, to get that perfect, soft, melt in the mouth Soft Ghee mysore pak.

So let's move on to the recipe of making Soft Ghee Mysore Pa.

Ingredients

2/3 cup ghee (clarified butter)
½ cup besan (gram flour)
1 cup sugar
¼ cup water

Method

  • Take all the ingredients and keep ready.
  • Mix ghee and besan in a bowl to form a smooth paste without any lumps and keep ready. Grease a square or rectangular plate with ghee and keep this ready as well.
  • Heat sugar and water in a thick bottomed pan and boil till it for sometime till the sugar melts and it forms a single thread consistency (See Tips below). (This might take about 2 to 3 minutes). Now switch off the gas and add the ghee-besan mix to the pan. Mix well and switch on the gas and cook in low flame while stirring continuously.
  • Continue cooking for about 3 minutes while stirring continuously. When it starts leaving the sides of the pan but is still in liquid state (and large bubbles are seen), switch off the gas and pour this immediately over the greased plate. Allow it to set for a few minutes.
  • When it has set but still warm, cut it into thin long rectangles. Allow the Mysore pa to cool down completely before taking the pieces off from the plate. Delicious soft ghee Mysore pak is ready to be served. This recipe makes 10 pieces.

Tips and solution to common mistakes

  • To check for single thread consistency, take a bowl of water and keep dropping small drops of sugar syrup into water every now and then. In the beginning, it will disperse, but when it reaches the single thread consistency, it will not change its shape and remain intact. At this stage, you can add the ghee- besan mix.  
  • If by mistake, you cook the Mysore pa for few more minutes, it will start thickening in the pan itself and will start hardening as you pour it into a plate. In this case, take a flat bowl or use a spatula and press the Mysore pak well when it is still hot, and cut it into pieces immediately. The taste will be similar, but you will get somewhat hard Mysore pak :( Try to take it off the stove a little earlier next time and you will get the perfect soft Mysore pak :)
  • This mysore pak tastes just like the Shree Krishna sweets Mysore pa and is really yummy :)
  • Increase the proportion of  ingredients if you want more pieces.
