VEG BIRYANI RECIPE/ VEGETABLE BIRYANI IN A PRESSURE COOKER WITH VIDEO




Hi friends, welcome back to my blog. Today, I am going to share a quick, healthy and delicious recipe of Vegetable Biryani in a pressure cooker. Veg Biryani is very easy to make and the whole process gets done in just 30 minutes. I have used potatoes, carrots, beans, peas and corn. But you can add cauliflower, double beans or any other vegetables of your choice.

Here I have made Veg Biryani that serves 6 to 8 people. If you are making lesser quantity or more quantity of Vegetable Biryani, then adjust the proportion of ingredients accordingly.


Biryani is one of the most popular delicacies in India and the world. Biryani is so flavorful and delicious that it is made at least once a week in my home. I have shared several different recipes of Biryani like Muslim dum Biryani chicken biryaniwhite chicken biryani, etc and today, I am sharing the recipe of one pot Pressure cooker Vegetable Biryani. It has all the goodness of veggies, (and you can make your children eat them without any fuss!) and gets cooked really fast as we use a pressure cooker here to make this delicious Vegetable Biryani.

For 1 cup of Basmati rice, we have to take 1 and 1/2 cups water while cooking any Biryani or Pulao. Here for 4 cups Basmati rice, I have taken 5 and 1/2 cups water not 6 cups, as we are adding tomato puree and not chopped tomatoes. If you want a softer Biryani rice, you can take the water quantity as 6 cups.

Always try to use fresh ginger garlic paste while making Biryani. It is this that gives a great flavor to the biryani. Please don't go with ready made ones available in the market.

Here I have served Vegetable Biryani with Onion raita and Plain Khurma (recipe coming soon). You can also serve Vegetable Biryani with Boiled Egg pepper fryChicken fry, Chicken gravy, Khatte Baingan/ Sour brinjal gravy, onion raita, or any other side dish of your choice.




So, let's head on to my recipe of making delicious one pot Vegetable Biryani at home...

Ingredients required for making Veg Biryani in a pressure cooker

1/2 kg/ 4 cups basmati rice
3 cups chopped vegetables (I have taken 2 potatoes, 1 carrot, 8 beans, 1/2 cup peas and corn)
1/2 cup oil
1 onion sliced
2 cardamom, 1 cinnamon, 1 star anise, 1 bay leaf, 2 cloves
1 tbsp garlic paste
1 tbsp ginger paste
3 and 1/2 tsp salt (or to taste)
2 tsp red chilli powder
4 large tomatoes deseeded and pureed
4 tbsp curd
coriander and mint leaves
juice of 2 small lemons
1 green chilli
water

Method
  • Wash the basmati rice in water a couple of times and allow it to soak in water for at least 30 minutes.
  • Cut the veggies into small pieces and keep this ready as well soaked in water. 
  • Remove the seeds from the tomatoes and grind it to a paste in a mixer jar. Keep this also ready.
  • Heat oil in a 5 litre pressure cooker and add sliced onions along with cardamoms, cloves, bay leaf, star anise and cinnamon.
  • When the onion turns golden, add garlic paste and saute for a couple of minutes till the raw smell goes.
  • Add ginger paste and saute for another 2 minutes.
  • Add red chilli powder and salt and cook for a minute.
  • Net add tomato puree and cook for 3 to 4 minutes till the oil starts separating.
  • Add curd and mix well.
  • Next add the veggies along with coriander, mint leaves and green chilli.
  • Give a quick stir and then add 2 cups water and mix well.
  • Close the lid of the pressure cooker and pressure cook for 2 whistles.
  • Once the steam has escaped, open the lid, add lemon juice and 3 and 1/2 cups water and bring to a boil.
  • Drain away the water from the Basmati rice and add the rice to the cooker.
  • Give it a mix and close the lid of the pressure cooker.
  • Pressure cook for 1 whistle and then reduce heat and cook for 3 minutes. Switch off the gas.
  • Allow the steam to come out and then open the lid.
  • Gently mix the Biryani, and transfer to a serving dish.
  • Serve hot with Chicken fryChicken gravyKhatte Baingan/ Sour brinjal gravy, onion raita, or any other side dish of your choice.
