Hi friends, welcome back to my blog. Today I am sharing an easy and quick recipe of making Vegetable and paneer Masala Maggi noodles. This recipe makes Noodles healthy as I have added lots of veggies and paneer into it. Here I have used Carrots, green peas and capsicum. You can also add other veggies of your choice and increase the quantity of veggies if you are fond of more veggies in your noodles.
This recipe of Vegetable and paneer Maggi Noodles is a favorite at home and we make this often for dinner. It is very easy to assemble, delicious and does not take much time in the kitchen. You can also chop the veggies a day earlier and freeze it in your refrigerator to reduce your cooking time.

- Break each Maggi noodle cake into 4 pieces and keep ready.
- Heat oil in a pressure cooker, add onions and saute till onions turn golden.
- Add garlic paste and ginger paste and saute till the raw smell goes.
- Next add red chilli powder, salt and tomato puree.
- Cook till the oil starts separating.
- Add maggi masala and mix well.
- Then add the veggies and paneer and mix well.
- Add 6 cups water and bring to a boil.
- When water starts boiling, add maggi cakes and chopped coriander and mint leaves.
- Close the lid of the pressure cooker and cook for 3 whistles.
- Once the steam has escaped, open the lid and transfer to a serving bowl.
- Serve hot.
