Strawberries are one of my favourite
fruits and I often use them in my desserts to add taste and colour. Strawberry kheer
is one such dessert. Just the addition of strawberries to a kheer takes the
taste to an all new level. Do try out this recipe and I am sure you will like it.
½ litres milk
6 fresh strawberries
4 tbsp sooji (semolina)
6 to 8 tbsp sugar (depending on the sweetness of strawberries)
1 strawberry sliced for garnish
Method
- Take the strawberries (without leaves) in a mixer grinder and grind to a smooth paste. Keep ready.
- Boil milk in a pan.
- Then reduce heat, add sooji and mix well.
- Increase the heat to medium and continue cooking and stirring for about 10 minutes or till the sooji is cooked.
- You can add ½ to 1 cup water if it becomes very thick.
- Once the sooji is cooked, add sugar and continue cooking and stirring for a couple of minutes.
- Add strawberry puree and mix well.
- Check for taste and add more sugar if required.
- Cook for a minute.
- Switch off the gas and allow it to cool.
- Transfer to individual serving bowls and garnish with sliced strawberries.
- Refrigerate for a few hours and serve cold.
