DOUBLE LAYERED SOOJI/ RAVA BARFI/ SEMOLINA SWEET



Sooji/ Rava/ Semolina is a versatile ingredient that can be used to make a number of dishes. I have shared several recipes using Semolina/ Rava/Sooji like Upma, Vegetable upma, Rava idli, Sooji ki firni, Rava laddoo, halwa, barfi, etc. And today, I am going to share a recipe of soft semolina barfi that is ideal sweet that you can make for festivals or any special occasion. This recipe of Semolina sweet or Rava barfi can also be packed in your kid's snack box as it is healthy and delicious.

Since this Semolina sweet/ Sooji ki barfi looks so beautiful and colourful, kids are sure to love this. I make this sweet often during holidays as my daughter loves it. Since this semolina barfi is made of milk, it comes out soft and needs refrigeration. Rava barfi stays fresh in the refrigerator for 4 to 5 days. 

Here I have made 2 layers using 2 food colours. You can make more layers or make Semolina sweet using just one colour. You can also add a pinch of saffron for extra fragrance and to enhance the taste of this Rava barfi.

You can also make Sooji/ Rava barfi a day ahead and serve during festivals like Eid, Diwali, Holi, Christmas, etc. Do try out the recipe and let me know how it comes out for you. Now let's head on to the recipe of making Soft Semolina sweet/ Rava barfi/ Sooji ki barfi

Ingredients 

1 cup sooji/rava/semolina
1 and 1/4 cups sugar
2 and 1/2 cups milk
pinch of cardamom/elaichi powder
4 tbsp ghee
yellow food colour dissolved in 2 tbsp milk
green food colour dissolved in 2 tbsp milk



Method

  • Grease a mould or cake pan with ghee and keep ready.
  • Heat ghee in a non stick pan, add 1 cup sooji/semolina/rava and fry for about 5 minutes in medium flame till it turns slight golden and fragrant.
  • Now reduce flame to low, add milk and mix well. There should not be any lumps.
  • Continue cooking for 5 to 10 minutes in medium to low flame till the milk is absorbed and the sooji is cooked.
  • Add sugar and mix well. Cook for about 5 minutes, then add cardamom powder.
  • Mix well and continue stirring.
  • When the sooji mix has slightly thickened, divide the mix into two and transfer half to a plate.
  • To the other half on the pan, add yellow food colour dissolved in milk and mix well.
  • Continue cooking in low flame for a minute till it leaves the sides of the pan and then transfer the yellow coloured mix to the greased mould.
  • Gently press and make the mix even.
  • Then transfer the first part of the mix back to the pan, add green colour dissolved in milk. Mix well and continue cooking till it leaves the sides of the pan.
  • Switch off the gas and transfer the mix to the mould with the yellow mix and press well.
  • Allow the mix to cool down completely. Refrigerate for a couple of hours.
  • Use a knife to loosen the edges and unmould the barfi.
  • Cut it into pieces. Our soft semolina barfi is ready to be served.
  • You can also place it in an airtight container in the refrigerator. This sweet stays good for up to a week if properly refrigerated.

Sooji ki firni


Sooji ki firni is a delicious sweet which needs very few ingredients. If you do not wish to spend much time in the kitchen and yet dish out a delicious sweet, then this recipe would be a perfect choice.



Gulgule is a delicious and easy to make traditional sweet that we often prepare at home. The recipe I am sharing today is my mother-in-law's who is an expert in making it. You can also make gulgules in large quantities at home and store them in air tight containers. They are an ideal snack for picnics and family get togethers.

Semolina or Rava ladoo is a very simple and easy to prepare sweet that gets done in less than 20 minutes. It is prepared by mixing roasted sooji with sugar, nuts and ghee and shaping the mix to form balls. The ladoos can be prepared and stored in an air tight container for later use.




Sooji ka halwa also called kesari (when a few strands of saffron are added to it) is a very popular sweet of Tamilnadu. It is made from semolina and sugar and tastes delicious. Using the recipe given below the halwa can be made in about 15 minutes.



Nan khatai is an crunchy and delicious biscuit often made using all purpose flour (maida) and butter. But there are several varieties of nan khatai made using different ingredients. This is an eggless recipe of nan khatai made with all purpose flour, semolina and gram flour.

Upma is one of the most commonly prepared breakfast varieties in most south Indian homes. At home, my mother sometimes prepares upma by adding tomatoes. This adds a nice flavour and taste to the regular upma.
