½ tsp cumin seeds
1 onion chopped
1 tsp garlic paste
1 large tomato pureed
¾ tsp salt (or to taste)
½ tsp red chilli powder (or to taste)
½ tsp chaat masala powder
Handful of coriander leaves
2 to 3 cups water
Tomato ketchup

Method

  • Heat oil in a pan; add mustard seeds, cumin seeds and onions and sauté for a minute till onions turn soft and golden.
  • Then add garlic paste and sauté for a few seconds till the raw smell goes.
  • Next add tomato puree, salt, red chilli powder and chaat masala powder and mix well.
  • Cook till oil starts separating and add coriander leaves and potatoes.
  • Mix well, cook for a minute and then add water.
  • Bring to a boil, then close a lid and cook in medium to low flame for 10 to 15 minutes till the potatoes are soft and cooked.
  • Open the lid and coarsely mash the potatoes.
  • Switch off the gas and allow it to cool down.
  • Finally take a bread slice, remove corners (optional) and add 1 or 2 tbsp of the potato filling.
  • Add a tsp of tomato ketchup on top and place another slice of bread over it.
  • Cut into 2 pieces. In the same way make more sandwiches.
  • Serve for breakfast or pack into your or your kids’ lunch box.
  • Enjoy.
