Today's recipe is a quick and easy sandwich recipe with cheese and omelet filling. This is ideal for breakfast and can also be packed for lunch.
Ingredients
8 slices of bread
4 cheese slices
4 eggs
2 large onions chopped
Red chilli powder to taste
Salt to taste
Bunch of coriander leaves
2 tbsp oil
Method
- Heat oil in a shallow pan and stir fry the onions till golden. Transfer to a plate and keep ready.
- Beat an egg in a bowl and add salt and red chilli powder to taste. Beat well till well mixed. Then add a quarter of stir fried onions and chopped coriander leaves and mix well.
- Heat a skillet and add a tbsp of oil. Spread evenly and pour the egg mix to it. Cook on both sides till the omelette is properly cooked.
- In the same way cook the remaining 3 omelettes.
- Now take the bread slices and cut off the sides. Cut the omelettes into square shapes and keep ready.
- Layer the bread slices with cheese slice and omelette and place another bread slice over it. Once all the four sandwiches are ready, heat a skillet and toast the sandwiches one by one till golden patches are seen.
- Cut the sandwiches diagonally and serve hot.
