EGGLESS SPONGE CAKE- PRESSURE COOKER CAKE WITH NO EGGS

  


Hi friends. I have come with another recipe of Eggless sponge cake. My earlier recipe of Eggless sponge cake was very much loved by you and most of my readers and I am thankful to all of you for your comments. Recently on popular demand, I baked an Eggless sponge cake without oven and without curd. This I think is the best Eggless sponge cake recipe that I have baked as everyone at home simply loved it and wanted me to bake this again and again.

You can imagine how much my daughter and husband loved it that I baked this cake three times in just 1 week and my daughter has been pestering me to bake this once more today. Do try out this fail proof Eggless sponge cake recipe and I am sure everyone at your home too would love it.

In this Eggless sponge cake, I have not used an oven, but baked the Eggless cake in a pressure cooker. I have added salt at the base of the cooker to prevent the cooker from burning. I have used ready made condensed milk in this recipe and the Eggless sponge cake comes out super soft and delicious.

You can also bake this Eggless Vanilla Sponge cake in your otg/oven. Place the cake pan in the central rack of a pre heated oven and bake at 180 degree C with the lower rods On for 25 to 30 minutes or till a toothpick or knife inserted in the cake comes out clean. If you have a small oven, reduce temperature to 160 degree C and adjust time accordingly.

Here in this recipe of Eggless Vanilla sponge cake, I have used 200 ml cup for measuring flour, sugar and milk. Make sure you keep all the ingredients ready before baking the cake and once the dry and wet ingredients are mixed to make the Eggless cake batter, place it into the oven or pressure cooker immediately to get a well risen and perfectly baked cake. And for making any cake, preheating the oven or pressure cooker for atleast 10 minutes is very essential to get a perfectly baked cake.

You can also frost this Eggless sponge cake with Buttercream or chocolate frosting and decorate it as per your choice. This Pressure cooker Eggless sponge cake tastes delicious as it is too and you can serve this as a Tea cake with tea or Coffee in the evening.

If you wish to make a Layer Cake or Birthday cake using this Eggless Sponge cake recipe, just double the ingredients and make the cake in 3 small cake pans. This way you will get 3 cake layers which you can stack on top of each other with frosting in between. You can finally decorate the cake on top.

Ingredients required for making Eggless Vanilla Sponge cake

1 cup maida/ all purpose flour
2 tsp corn flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup granulated sugar/ regular sugar
1/2 cup milk
4 tbsp condensed milk ( I used milkmaid)
25 gms butter (softened)
1 tsp vanilla essence
1 tsp vinegar

Method
  • Grease a mould with butter and dust with flour. Keep ready.
  • Seive together Maida, corn flour, baking powder, baking soda and salt twice and keep the dry ingredients ready.
  • Take a pressure cooker, add 1 cup salt and spread evenly. Place a stand in the middle and close the lid of the pressure cooker without gasket and whistle. Heat in medium flame for about 10 minutes. This is similar to preheating the oven.
  • Beat butter in a bowl with a whisk for a minute till it turns soft.
  • Add condensed milk and mix well.
  • Now in another bowl, take warm milk and sugar and whisk well till the sugar dissolves.
  • Add this milk-sugar mix to the butter and condensed milk and whisk well for a couple of minutes.
  • Now add the dry ingredients little by little to this and mix gently such that there are no lumps.
  • Finally add vinegar and mix well.
  • You will get a slightly thick batter.
  • Pour this into the mould and gently tap to remove air bubbles, if any.
  • Place the mould over the stand and close the lid of the presure cooker.
  • Cook in medium flame for 10 minutes,then reduce flame to low and cook for another 15 minutes.
  • Once done,switch off the gas and open the lid.
  • Insert a skewer or knife into it. If it comes out clean, your cake is ready.
  • Transfer the mould to a stand and allow it to cool down completely.
  • Run a knife along the mould and demould the cake on a plate. Cut into pieces and serve.

I have used a 200 ml cup for measuring
