Here I have used a 180 ml/ normal sized tea cup for measuring all the ingredients that are required to make Vermicelli Kheer/ Semiya Payasam. You can adjust the sugar and milk proportions according to your taste.
Let's move on to the recipe of making tasty Vermicelli Kheer/ Semiya Payasam
Serves: 4
Ingredients
100 gms short roasted vermicelli (I used Bambino)
4 cups water to cook the vermicelli
3 cups boiled and cooled full cream milk
4 tbsp condensed milk
1/4 tsp cardamom powder
2 tbsp ghee
1/4 cup chopped cashews and almonds
1 cup sugar (or to taste)
2 tbsp Pistachios finely chopped (for garnish)
Method
- Boil water in a pan. Add the vermicelli and cook for 10 to 12 minutes till it is cooked.
- While the Vermicelli is getting cooked, heat ghee in a non stick pan, in another stove, add the finely chopped cashews and almonds and saute till they turn golden.
- Switch off the flame, and transfer the fried dry fruits to a bowl. Keep ready.
- Once the vermicelli is cooked, add milk, sugar and cardamom powder and bring to a boil.
- Now add condensed milk and mix well.
- Cook for about 5 minutes while stirring, so that the Kheer thickens a bit.
- Finally add the ghee roasted nuts and mix well.
- Switch off the gas.
- Transfer the Vermicelli kheer to a serving bowl.
- Garnish with finely chopped pistachios and serve hot.
- You can alternately allow the Vermicelli kheer to come to room temperature and refrigerate for 2 to 3 hours and serve cold.
