RAINBOW CAKE/ EASY BIRTHDAY CAKE WITH SWEETENED CONDENSED MILK BUTTERCREAM FROSTING AND GEMS


Hi friends, welcome back to my blog. Today I am sharing a colorful and beautiful Rainbow cake recipe with condensed milk buttercream frosting. This Rainbow cake is very easy to make and even beginners can try. I made this cake for my daughter's birthday and it came out delicious. You can make this cake for birthday parties, or for any other celebration.



This is an oil based cake recipe, hence I have not used Butter in the cake batter. And for the frosting I have used sweetened condensed milk along with unsalted butter to get a smooth and stabilized butter cream. The frosting stays good without melting for 2 to 3 days.

You can also increase the proportion of ingredients to make a larger cake. I have used normal sugar in the recipe. But you can also grind the sugar in a mixer and add to the eggs. Do remember that all ingredients must be at room temperature for the cake to come out perfectly risen, soft and spongy with a flat top.
I have used a 180 ml measuring cup/ normal tea cup for measuring all the ingredients.




So, let's move on to the recipe of making Rainbow cake at home

Ingredients required for making Rainbow cake at home

1 and 3/4 cup All purpose flour/ Maida
1 and 1/2 tsp baking powder
1/2 cup milk
1 and 1/2 cups sugar 
1/2 cup oil (I have used sunflower oil)
2 eggs
1 tsp vanilla essence
food colors

For the Frosting

100 gms unsalted butter (Keep this outside the refrigerator for 1 or 2 hours. The butter has to be soft but not melted)
100 gms chilled sweetened condensed milk (I used mithai mate) or slightly more as per your taste
1/4 tsp vanilla essence

Method

For making the Cake
  • Beat eggs in a bowl with an electric beater. 
  • Add sugar and continue beating for a 3 to 4 minutes or till the sugar dissolves and the mix changes color to pale yellow.
  • Add sunflower oil, vanilla essence and beat well.
  • Sieve All purpose flour and baking powder twice and keep ready in a bowl. 
  • Add the flour mix little by little to the wet ingredients.
  • Gently mix or fold with a whisk or spatula to make a smooth and lump free batter. (Do not beat with a beater.)
  • Add milk and mix gently. You will get a slightly thick batter with ribbon consistency.
  • Preheat oven at 170 degree C for 10 minutes. Grease a round baking pan (or 2 small pans) with oil and line with butter paper and keep ready.
  • Now divide the cake batter into 5 to 7 small bowls and add different food color to each bowl and mix. You can use all colors of the rainbow like violet, indigo, blue, green, red, yellow, orange or use colors that you have.
  • Here I have used red, green, orange, yellow, and peach color to color the batter.
  • Now take the butter paper lined cake pan and pour yellow color batter in it.
  • Then pour red batter in the middle.
  • Next follow with peach, green and orange cake batters.
  • Gently tap the cake pan and place it in the preheated oven. 


  • Bake at 170 degree C with upper and lower rods On for 20 to 25 minutes or till a tooth pick inserted comes out clean.
  • Allow the cake to cool down completely, run a knife around the edges and invert on a plate.
  • Cut off a thin cake sheet from the top, so that it is easy to frost. Also cut the cake in the middle so that you get 2 layers.
  • Frost the cake with Condensed milk Butter cream frosting (recipe given below), make patterns using a cake comb and decorate with gems on top.
  • Add some cocoa powder to the remaining frosting and mix. Transfer this to a piping bag and pipe in Happy Birthday on the cake or pipe any other writing of your choice.
  • Rainbow cake with frosting is ready to be served.
  • You can store the cake in an air tight container. This Rainbow cake with Condensed milk Butter cream frosting stays fresh for 2 to 3 days.

Method for making Condensed milk Butter cream frosting 
  • Take Soft butter in a bowl. Beat well for 3 to 4 minutes so that the butter turns color from yellow to pale yellow.
  • Continue beating for 2 more minutes.
  • Then add Sweetened condensed milk little by little.
  • Add some then beat for 2 minutes, then add some more and continue beating.
  • (You can check for taste and stop adding condensed milk if you prefer a less sweet taste)
  • As you beat the frosting the color will change to white.
  • Check for taste and add more condensed milk if required.
  • Finally add vanilla essence and beat for one more minute.
  • Pipe this into a piping bag and decorate with designs of your choice or you can keep it plain as I have done and use a cake comb to make patterns on it.
