SOOJI KI BARFI





This is a slight variation to the regular Sooji ka halwa. The method of cooking is the same as that of a halwa, but on increasing the cooking time and setting the halwa, we get a semolina barfi.

Ingredients

1 cup semolina
2 ½ cups water
8 tbsp sugar
2 tbsp oil
¼ tsp cardamom powder
A pinch of turmeric powder
3 to 4 tbsp chopped nuts

Method

Heat oil in a pan, when it becomes hot; add chopped nuts and a pinch of turmeric powder. Cook for a few minutes till the nuts turn golden. Then add water and sugar. Keep stirring and bring it to a boil. Now add semolina and cardamom powder and continue to stir to prevent it from sticking to the pan. When it starts boiling, switch off the gas. Wait for a few minutes, till it comes to slightly warm temperature. Then take a tray and transfer the halwa to it, press with a spatula to form an even rectangle of your desired thickness. Allow it to cool a little and cut it into squares and transfer to a plate. You can serve as it is or refrigerate the barfis for about ½ an hour and serve cold.
