CHICKEN KOFTAS (MANCHURIAN STYLE)





Koftas are small balls of minced meat mixed with a variety of spices, onions and tomatoes often cooked in simmering masala gravy. Apart from the kofta curry, koftas can also be deep fried or stir fried and served as meat balls. Given below is an innovative Indo Chinese recipe where these traditional Indian meat balls (koftas) are combined with Chinese Manchurian gravy. The combination works wonders and tastes delicious. These chicken koftas in Manchurian gravy can be served as a starter or with fried rice or noodles.


Ingredients

For the koftas
250 gms boneless chicken
1 Big onion chopped
½ tsp garlic paste
½ tsp ginger paste
2 tomatoes pureed
¾ tsp red chilli powder
¾ tsp salt
100 gms roasted gram powder
5 drops of lemon
Coriander leaves

For the gravy
2 to 3 tbsp oil
1 onion finely chopped
1 tbsp finely chopped garlic
1 tbsp finely chopped ginger
3 tbsp tomato sauce
½ tsp red chilli powder
½ tsp pepper powder
½ tsp salt (or to taste)
Coriander leaves chopped
Spring onion greens chopped

Method

First grind the chicken pieces, onion and coriander leaves into a fine paste. (Do not add water)Then remove the paste into a bowl and add all the other ingredients for the kofta and mix well. (The mixture will not be firm but you will be able to make balls easily).Once done, set aside.

Then heat 3 cups water in a pan and when it starts boiling, take the kofta mixture, make small balls and drop it into the water. Cook till most of the water has evaporated. As it starts getting dry, add 2tbsp oil and stir fry the koftas in the same pan till they are golden brown in colour.

Now to prepare the sauce, heat oil in pan, add onions, chopped garlic and ginger and saute for some time Then add pepper powder, red chilli powder, salt, tomato sauce, coriander leaves and spring onions. Mix well and cook for a minute. Check for taste. Finally add 1/4 cup of water, mix well and bring to a boil. Cook for 1 to 2 minutes or till the sauce starts thickening. Add meat balls only when you are ready to serve. Stir for 2 to 3 minutes and make sure that the sauce completely covers the meat balls (koftas). Serve hot as a starter or with Fried rice or Noodles.
