SAMBAR SADAM IN A PRESSURE COOKER





Sambar sadam/ rice is a healthy and delicious rice preparation made using lentils, vegetables and spices. It is a common lunch variety in several south Indian homes and is often served with poriyal and papad. Since Sambar sadam usually has a semi gravy consistency, the proportion of water used here is more compared to other rice varieties. Sambar rice can be cooked in less than 30 minutes.


Serves : 4
Ingredients

1½ cups rice
¾ cup toor dal
1 onion chopped
1 large tomato chopped and deseeded
2 tbsp oil
1 tsp mustard seeds
¼ tsp asafoetida
3 to 4 dry red chillies
8 to 10 curry leaves
1 lemon sized ball of tamarind
2 tbsp sambar powder ( we use Aachi brand)
1 tsp turmeric powder
1 ½ tsp salt
1 cup chopped vegetables (carrot, beans or any other)
3 to 4 tbsp coriander leaves
5 ½ cups water

Method

Wash and soak the dal and rice in water for about half an hour. Extract the pulp of tamarind  after soaking it in water for about 10 minutes. Clean and chop the onion, tomato, beans and carrots and keep all the other ingredients ready.




Heat oil in a pressure cooker, add mustard seeds, asafoetida, red chillies and curry leaves and saute for a minute. Then add onions and saute till onions turn golden. Next add sambar powder, turmeric powder, salt, tomatoes and chopped vegetables one after the other and stir for a few minutes. Drain the excess water and add the rice and dal to the cooker. Finally add tamarind water/pulp along with water totaling to 5 ½ cups. Adjust the proportion of water according to your preference. Add more water if necessary. 




Close the lid of the pressure cooker and pressure cook for about 10 minutes or 3 whistles. Mix well and serve hot with papad, poriyal or chicken pakodas.
