Vegetable Macaroni is one of the most common recipes that I make at home. It is easy to make, healthy and delicious at the same time. And you need just 30 minutes to make this delicious treat. Vegetable Macaroni can be served for both Breakfast or dinner. 

Vegetable Macaroni is an excellent way to include vegetables in our kid's diet as they eat this healthy and filling dish without any complaints. Vegetable Macaroni tastes great with tomato ketchup.You can also top the Vegetable Macaroni with some grated cheese and kids are going to love it.

My family likes this Vegetable Macaroni a lot. Do try out this yummy recipe at home and I am sure your family is also going to like it.

So, Let's move on to the recipe of making Vegetable Macaroni.

Serves: 4

4 cups wheat Macaroni/ approx 250 gms
4 tbsp oil
1 cardamom
1 cinnamon
1 large onion finely chopped
1 tbsp ginger garlic paste
4 tomatoes puréed
1 tsp chilli powder (or to taste)
2 tsp salt (or to taste)
3 tbsp curd
1 potato cut into small pieces
1 carrot cut into small pieces
5 to 6 french beans finely sliced
1/4 cup shelled peas
Chopped coriander and mint leaves


  • Heat oil in a pressure cooker and add cardamom, cinnamon and chopped onions.
  • Cook for a few minutes till the onions turn soft.
  • Now add ginger garlic paste and sauté for a couple of minutes till the raw smell goes.
  • Next add red chilli powder, salt and tomato puree and cook for about 5 minutes till oil starts separating.
  • Next add the vegetables and curd and mix well.
  • Now add 8 cups of water and bring to a boil.
  • Once the water starts boiling, add the macaroni. Mix well.
  • Finally add chopped coriander and mint leaves.
  • Close the lid and pressure cook for 3 to 4 whistles.
  • Once the steam escapes, open the lid and check for taste. (Add salt or red chilli powder if necessary. Boil for a minute.)
  • Transfer to a serving bowl and serve hot with Tomato Ketchup.
